Apr 15, Pasta, Pasta, Pasta!

My latest obsession is Pasta! I make it fresh at least a few times a week. Most people are still afraid that all of those nasty rumors are true that state that pasta and carbohydrates make you fat. Just to clear the air on this topic, I started making my own pasta and eating more carbs than I have eaten in years and get this... I lost six pounds right away! The operative idea here is that I made it myself. No processed stuff, no fake stuff, just real, honest food. Knowing that I made the food myself changed my view of what I was eating from a bowl of store-bought, not-so-special stuff to an artesinal gift to myself that took time and care to make. It wasn't carbs and calories anymore, it was a work of art! Tasty!

Feb 25, Got Organic Milk?

I recently read in article about the benefits of organic milk, one of which being that when it comes from grass fed cows it contains up to 66 percent more omega 3 fatty acids than non organic milk from corn fed cows. That means that although the organic milk is more expensive you can save on those pricey supplements and and tastier milk too! I have also been to dairy farms that provide non organic milk from pretty unhappy cows sitting in stinky pens of feces and no space to move, and from that moment I have vowed to buy organic milk from happy free cows!

Feb 10, Quote of the day

"For a long time it had seemed to me that life was about to begin - real life. But there was always some obstacle in the way, something to be gotten through first, some unfinished business, time to be served, a debt to be paid. Then life would begin. At last it dawned on me that these obstacles were my life."

Jan 27, San Jose Shelter Fundraiser

Please help out the homeless and get a workout too!

San Jose, CA -- Fit Body Boot Camp in San Jose, announces the February 13, 2010 Burn the Fat, Feed the Hungry three hour Boot Camp aimed to raise money for the San Jose Family Shelter and to promote fitness as part of a healthy lifestyle.

Donations to charities in the San Jose area are down dramatically since the collapse of the housing market and downturn in the economy. Couple that with the stark reality that the majority of Americans are overweight and it was a no brainer for us to combine two worthwhile efforts into one event. Encouraging local neighbors to come down for a one day three hour Boot Camp workout where 100 of the $25 entry fee will go to the San Jose Family Shelter to help feed the hungry and give families a place to live while they get back on their feet again, was too good of a cause to pass up, says Chris Fernandez, celebrity personal trainer and CEO of Fit Body Boot Camp in San Jose.

The Burn the Fat, Feed the Hungry Boot Camp will be held on Saturday, February 13th from 8:00 AM to 11:00 AM for a $25 donation. The workout will take place indoors at the West Valley Gymnastic School located at 1190 Dell Ave, Campbell, CA.

Jan 15, Sunny Days!

Tonight I took a walk to the park with my son, and it was not dark until we got back home! Usually we stay out longer than the short daylight hours, but we are now on the upswing to summer! Longer days means more time to be outside in the fresh air, and time to exercise! It's never to early to start walking off those winter pounds and lightening up with some Vitamin D enhancing sunshine! We need it!

Dec 18, What You Focus On Expands!

What you focus on expands and that includes your pants size! Losing weight is a common woe that many people share, but it can be changed into a healthy lifestyle and healthy body, simply by changing our focus from not wanting to be fat, to wanting to be healthy. Focusing on being healthy will help you to naturally make healthier eating choices and motivate you get up and move around. Having this focus creates a feeling of health almost immediately, warding off the desire to carry out that unhealthy lifestyle and that extra weight any longer. Most people have a vision of what health is, and the lifestyle that they would like to achieve; something like eating right, exercising and having a positive self image. If you hold this image, the results should follow.

Having trouble with the route from your vision to reality? Find a day of grade school that is cached somewhere in your memory to reveal how we are taught moderation very early on in life. We followed the Rule of Sometimes: Sometimes we would read, sometimes have a snack or lunch, sometimes take a nap, and sometimes run and play. The ability to get up and run around then was a privilege. What changed? Becoming tired, overworked and bombarded by diet schemes implying that we are already out of shape transforms us to think that we are indeed, tired and out of shape. Ignoring all of the gimmicks, advertisements and negative thinking, and remembering how effortlessly we stayed healthy in our earliest and most innocent of times can only lead us to our most desired state of being, physically, and mentally.

Dec 15, Old Habits Die Hard - Even Good Ones!

Last weekend I made holiday cookies with my two year old son, and I must admit that I ate one with a lot of colorful frosting that he made for me. It had been a long time since I ate a sugar cookie, and the feeling that it gave me was mixed: filled with holiday spirit, and a little sick! I have been eating well for so long that the cookie was no longer what my taste buds or body wanted. My body rejected it! My healthy habits wished to remain and let me know not to have any more treats... At least for a while! Keep up those healthy habits all year long and they will help you out when you need them most during the holidays!

Dec 11, Squash it!

I just had the best soup of my life! I made it with kambocha squash - a squash with the taste and texture similar to roasted chestnuts. Mmmm. Cooking seasonally is the most important thing that you can do for your health, the environment and your appetite. Ever notice how the foods of the season satisfy you in just the right way? Refreshing fruits of summer and more hearty veggies and squash items in the winter. Cut the kambocha in half, scoop out seeds and roast at 375 degrees for about 35-40 minutes. Scoop contents into a pot and dilute with some chicken stock or water. Use an immersion blender to smooth it into a puree. Add some milk or cream until desired soup consistency along with salt, pepper, nutmeg and powdered ginger to your taste. Sprinkle some freshly grated parmesan cheese on top and enjoy! (A scoop of sour cream on top can be a refreshing twist!) Enjoy!

Dec 10, Diet Secrets of a Toddler

I am a chef, certified personal trainer and a mom. I have discovered that the mindset regarding eating is the most important thing, not necessarily the diet methods that don't fit you. I discovered this when trying to
get my toddler to eat and wrote a book about it - Diet Secrets of A Toddler, By Laura Andolini. It is on my website if you are interested. www.cooking-for-fitness.com , or amazon.com. I hope you enjoy it!
